The perfect blend of comfort food classics, this Easy, One-Pot Lasagna Soup combines the best parts of its namesake dish (hearty noodles, flavorful Italian sausage) with the red wine-infused complexity of bolognese sauce. A mix of Pacific Foods® Organic Vegan Creamy Tomato Basil Soup and Pacific Foods® Organic Vegetable Broth is the ultimate shortcut for creating a smooth, savory soup base, while torn mozzarella and basil leaves add a touch of freshness. 

Ingredients

  • 1 tablespoon olive oil
  • 1 cup yellow onion, chopped (from 1 small onion)
  • 1 can (6-ounce) tomato paste
  • 4 cloves garlic, minced (about 4 teaspoons)
  • 1 pound mild Italian pork sausage
  • 1/2 cup dry red wine
  • 4 cups (1 32-ounce carton) Pacific Foods® Organic Vegetable Broth
  • 4 cups (1 32-ounce carton) Pacific Foods™ Organic Vegan Creamy Tomato Basil Soup
  • 1 can (28-ounce) diced tomatoes, drained
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon fresh cracked black pepper, plus more for garnish
  • 8 uncooked lasagna noodles (about 8 ounces total), broken into bite-sized pieces (about 3 cups)
  • 4 ounces fresh whole milk mozzarella cheese, torn (about 1 cup)
  • 1/4 cup fresh basil leaves

Instructions

  • Step 1

    Add olive oil to a large pot over medium heat. Add onion and cook, stirring occasionally, until slightly translucent, about 3 minutes. Add in tomato paste and garlic and cook, stirring occasionally, for 3 minutes or until slightly darkened in color. Stir in sausage and cook, stirring occasionally, for 8 minutes, until browned and crumbled. 

  • Step 2

    Add wine and cook, using a wooden spoon to scrape up any browned bits, for 1 minute or until slightly reduced.

  • Step 3

    Add Pacific Foods® Organic Vegetable Broth, Pacific Foods® Organic Vegan Creamy Tomato Basil Soup, diced tomatoes, Italian seasoning, and black pepper to the pot. Bring mixture to a gentle boil, add lasagna noodles, and stir well. Cook, stirring occasionally, for 12 to 15 minutes, or until noodles are tender. 

  • Step 4

    Divide soup into bowls and top with torn fresh mozzarella, basil, and additional black pepper. Enjoy!

  • Tips

    • The onion, garlic, tomato paste, sausage, and red wine mixture can be cooked and refrigerated in an airtight container up to 5 days ahead of time before continuing with the rest of the recipe.
