Garlic Bread Grilled Cheese Croutons with Roasted Red Pepper & Tomato Bisque

Ingredients

  • 4 tablespoons butter, softened
  • 3 cloves garlic, minced
  • 1/2 teaspoon minced fresh thyme leaves
  • 1 tablespoon minced fresh basil leaves
  • 1/4 teaspoon salt
  • 4 slices your favorite bread
  • 2/3 cup shredded Cheddar cheese
  • 2/3 cup shredded mozzarella cheese
  • 2 cans (17.6 ounces each) Pacific Foods™ Organic Roasted Red Pepper & Tomato Bisque

Instructions

  • Step 1

    Place the butter, garlic, thyme, basil and salt into a medium bowl.  Mix well.

  • Step 2

    Heat a cast iron skillet over medium heat.  Spread the butter mixture on the bread slices.  Place 2 bread slices, butter-side down, into the skillet. Top with the cheese and remaining bread slices, butter-side up.  Cook until the sandwiches are lightly browned on both sides and the cheese is melted.

  • Step 3

    Heat the soup according to the package directions.  Cut the grilled cheese sandwiches into squares and serve on top of the soup.
